This is a super simple, quick meal that I make super often. It’s a great meal to make when you need to use leftover meat or veggies and always comes out great! I happen to have frozen zucchini, a can of black beans and an onion I need to use this week, so that’s what I’m using to make these this week, but these are always great with any type of meat and veggie or just plain cheese!
Ingredients:
-tortillas
-1 cup cheddar cheese
-1/c cup chopped onion
-2 cups freshly sliced (or frozen) zucchini
-2 cups black beans, drained
Directions:
-Place a greased skillet over M/H heat.
-Cook the onions and zucchini until tender and browned.
-Lay the tortillas out flat on your counter and sprinkle cheese onto one half of each tortilla.
-Drain the can of beans and add beans, cooked onion & zucchini to a bowl. Combine.
-Spoon the cooked onion, beans & zucchini on top of the cheese and fold the tortillas in half.
-Put one or two of the folded tortillas into your skillet, making sure there is still cooking spray/oil in the pan so the tortillas won’t burn.
-Cook for a couple of minutes on each side, until the tortillas are lightly browned and the cheese is melted.
-Serve with black beans or chips and salsa.
